Ingredients (5 servings)
1 kg of calf minced (any low-fat part is fine; you can also use minced chicken or turkey and you won't enjoy this recipe less!) -- 2 onions chopped -- 2 cloves of garlic chopped -- A shot of cognac -- Juice of one orange -- 500 ml chopped tomatoes -- 2 bay leaves -- 1 t. pimento powder -- 1/3 t. cinnamon -- 1 t. nutmeg -- 1 bunch of parsley -- 1 t. honey -- Salt -- Pepper -- 1 pack (500 g) whole wheat spaghetti -- Regato cheese light grated
Directions
Heat a saucepan without olive oil or anything and roast the mince for about 7 minutes to brown it, without stirring a lot, to avoid boiling it in its juice.
Add the chopped onion and garlic, the cognac and orange juice, tomatoes, and the bay leaves. Add a little water and let it simmer for about half an hour. Finally, add salt and pepper, the spices, parsley and honey. Simmer for about 10 minutes more, until the sauce is thick enough. Remove the bay leaves and parsley bunch.
Serve it above the spaghetti and below grated cheese. Wine or beer is fine, and any salad you may like. I prefer to enjoy it without a salad, though.
